Try this protein-rich main meal
Saryn Muldrow, 1996 Fitness Olympia champion, created this recipe while she worked for a Danish catering company that offered fit menu choices. This quick dish will energize you and your taste buds.
Serves 2
1⁄2 Tbsp. sesame oil
2 medium chicken breasts,
cut into 1-inch strips
3 tsp. minced garlic
1⁄2 tsp. red chili paste
2 cups sliced mushrooms
4 ears baby corn, diced
1⁄2 medium red bell pepper, sliced
1 medium onion, cut into eighths
2 Tbsp. oyster sauce
8 oz. diced pineapple in
100% juice
8 frozen cooked-and-peeled
tiger prawns
1 cup steamed rice
2 green onions, chopped
1. Heat oil in a wok over
medium-high heat. Add
chicken and cook for 5-7
minutes or until done, stirring
continuously. Drain.
2. Add garlic, chili paste, mushrooms, baby corn, bell pepper and onion. Stir-fry for seven minutes, then add oyster
sauce, pineapple and prawns. Continue cooking until shrimp are cooked through.
3. Remove from heat.
Divide mixture over steamed rice and sprinkle green
onions on top.
